Comfort Food - Crockpot

Crockpots make good comfort food. 
My latest deliciousness in a crockpot is White Chicken Chili.

Simple recipe, and it goes a little something like this:
* 1 1/4 lbs boneless skinless chicken
* 2 (15 ounce) cans great northern beans
* 1 (15 ounce) can white & golden corn
* 1 (1 1/4 ounce) white chicken chili seasoning
* 1 (4 1/2 ounce) can of chopped green chilies
* 1 (10 3/4 ounce) can condensed cream of chicken soup {I can't have this because of the dairy, so I just did two cans of broth - it made it more like chicken chili soup, but was still super delish}
* 1 (14 ounce) can chicken broth
* 1/2 cup sour cream {generous with this portion}
* chopped green onion (optional)
* monterey jack cheese - I put this on top after.

Throw it all in at the same time and let cook. :) I cooked on high for 4 hours and it was PERF!
